Herring Apple Salad
Herring Apple Salad measurements Metric / Imperial
100g 4oz pasta shells (1cup)
pepper and salt to suit your own personal taste
2 tablespoons French dressing mix (Italian)
2 red dessert apples cored and slice thinly (red peel)
2 tablespoons raisins
150ml 1/4 pint of soured low fat cream (2/3 cup)
Grated rind and juice of half a lemon
1 tablespoon of chopped up parsley
4 rollmops chopped up (rollmop herrings)
Herring Apple Salad:-
Cook the pasta shells in salted boiling water until they are tender. Drain and allow to cool slightly, shake with the dressing mix. Fold in the apples and raisins and then allow to cool completely. Mix together the sour low fat cream, lemon rind and juice, parsley and pepper and salt to suit your own personal taste.
Spread out the pasta mix into a serving dish and arrange the rollmops on the top. Spoon over the dressing mix made with sour low fat cream and serve.
Herring and apple salad serves 4 people.
