Ingredients Rainbow Mixed Salad

Rainbow Mixed Salad measurements  Metric / Imperial (American)

175g 6oz pasta shells (1 1/2 cups)

pepper and salt to suit your own personal taste

1 green pepper, cored, seeded and chopped up

4 spring onions chopped up (scallions)

100g 4 oz cooked sweetcorn kernels (3/4 cup)

4 tomatoes chopped up

100g 4oz salami chopped up

4 tablespoons of low calorie mayonnaise(1/4 cup)

2 tablespoons of single low fat cream (light low fat cream)

watercress to garnish

Method for Rainbow Mixed Salad:-

Cook the pasta shells in salted boiling water until they are nearly tender. Drain and allow to cool. Mix together the pasta shells, green pepper, spring onions (scallions), corn, tomatoes and salami then spoon the contents into a serving dish. Mix together the low calorie mayonnaise, low fat cream, pepper and salt to suit your own personal taste and pour over the salad. Shake well together, then garnish with watercress and serve.

Rainbow mixed salad serves 4 to 6 people.
