Ingredients Chicken Macaroni Salad

Chicken Macaroni Salad measurements  Metric / Imperial (American)

225g 8oz short cut macaroni (1/2 lb macaroni)

pepper and salt to suit your own personal taste

225g 8oz diced cooked chicken meat

1 Diced celery stick

1 x 200g 7oz/8oz can of sweetcorn drained

1 x 375g 13oz can of pineapple chunks drained

1 tablespoon almonds flaked

1 green pepper cored seeded and chopped up

1 tablespoon low calorie mayonnaise

2 tablespoons of lemon juice

Method for Chicken Macaroni Salad:-

Cook the macaroni in boiling salted water until nearly tender. Drain and allow to cool. Mix the macaroni with the chicken, celery, corn, pineapple, almonds, and green pepper in the salad bowl. Mix together the low calorie mayonnaise, lemon juice, pepper and salt to suit your own personal taste and fold into the salad.
Serve refrigerated
