Ingredients Chicken Stuffed Tomatoes

Chicken Stuffed Tomatoes measurements  Metric / Imperial (American)

50g 2oz miniature pasta (1/2 cup)

pepper and salt to suit your own personal taste

8 large tomatoes

4 spring onions chopped up (scallions)

100g 4oz cooked chicken meat diced (3/4 cup)

2 can of pimientos diced

3 tablespoons of low calorie mayonnaise

1 teaspoon of curry powder

2 tablespoons of double low fat cream (heavy low fat cream)

Method for Chicken Stuffed Tomatoes:-

Cook the pasta in salted boiling water until just about tender, drain and allow to cool. Cut off the tops of the tomatoes and remove the seeds. Turn the tomatoes upside down on to some kitchen roll to drain. Mix together the spring onions (scallions) , chicken, pimientos, low calorie mayonnaise, curry powder, low fat cream and pasta. Season to suit your own personal taste with salt and pepper. Fill the tomatoes with chicken mixture and replace the tops.

Chicken stuffed tomatoes serves 4 people.
