Ingredients Courgette Zucchini Salad

Courgette Zucchini Salad measurements  Metric / Imperial (American)

175g 6oz pasta shells (1 1/2 cups)

pepper and salt to suit your own personal taste

4 courgettes thinly sliced

6 tablespoons of bottled French dressing mix (bottled Italian )dressing mix

2 chopped up tomatoes

8 black olives stoned (olives ripe pitted)

2 spring onions chopped up (scallions)

1 tablespoon of chopped up parsley.

Method for Courgette Zucchini Salad:-

Cook the pasta shells in salted boiling water until they are tender. Meanwhile cook the courgettes (zucchini) in boiling water until they are tender but still crisp. Drain well and leave to cool. Drain the pasta shells and mix with two tablespoons of the dressing mix, and allow to cool. Mix together the pasta shells, courgettes (zucchini), tomatoes, olives, spring onions (scallions), parsley and the remaining dressing mix. Serve lightly refrigerated.

Courgette Zucchini Salad serves 4 people.
