How to create Exotic Cucumber Salad

Exotic Cucumber Salad 

Ingredients Exotic Cucumber Salad

Exotic Cucumber Salad measurements  Metric / Imperial (American)

2 medium cucumbers peeled and seeded in 7.5cm (3inch) strips

3 tablespoons of vinegar

1 teaspoon of salt

6 tablespoons of oil

2 onions sliced

1 sliced clove of garlic

1 pinch of ground turmeric

1 teaspoon of sugar

Method for Exotic Cucumber Salad:-

Place the cucumber into a saucepan and add water to cover, add 2 tablespoons of the vinegar. Bring the mixture to the boil and allow to simmer for about four minutes or until the cucumber becomes transparent. Drain and sprinkle with 1/2 a teaspoon of the salt and allow to cool. Heat the oil in a frying pan (skillet). Add the onions and garlic and fry until crisp and golden. Remove from the pan with a slotted spoon and allow to drain onto some kitchen roll. Stir the turmeric, sugar and remaining salt into the oil in the pan and allow to cool. Stir in the remaining vinegar, then fold in the cucumber to coat well with the dressing mix. Drain the cucumber and place into a serving dish. Sprinkle over the onions and garlic and serve cold or refrigerated.

Exotic cucumber salad will serve 4 people.
