225g 8oz sliced button mushrooms (1/2 lb)
4 tablespoons of lemon juice
2 tablespoons wine vinegar
1 crushed clove of garlic
pepper and salt to suit your own personal taste
500g 1lb short cut macaroni (elbow)
1 red pepper cored seeded and chopped up
150 ml 1/4 pint low calorie mayonnaise low calorie
150 ml 1/4 pint plain low fat yogurt Method for
Macaroni Mushroom Salad:-
Mix together the mushrooms, lemon juice, vinegar, garlic and pepper and salt to suit your own personal taste. Leave to marinate for thirty minutes. Meanwhile cook the macaroni in salted boiling water until they are tender, drain and allow to cool. Add the macaroni to the mushrooms with the red pepper, low calorie mayonnaise, low fat yogurt, and the pepper and salt to suit your own personal taste. Fold together well. Serve the salad lightly refrigerated.
Macaroni mushroom salad will serve 6 people.
