Ingredients Spaghetti Mushroom Salad

Spaghetti Mushroom Salad measurements  Metric / Imperial (American)

350g 12oz short lengths of spaghetti (3/4lb)

pepper and salt to suit your own personal taste

4 spring onions chopped up (scallions)

2 celery sticks chopped up

175g 6oz of sliced mushrooms (1 1/2 cups)

1 tablespoon of chopped up parsley

some lettuce leaves


6 tablespoons of oil, 2 tablespoons of wine vinegar

2 teaspoons of curry powder

2 tablespoons of tomato puree (paste)

1 teaspoon of brown sugar

Method for Spaghetti Mushroom Salad:-

Cook the spaghetti in boiling salted water until it is nearly tender. Drain and allow to cool. Mix together the dressing mix ingredients with the pepper and salt to suit your own personal taste. Add to the spaghetti and shake well to coat. Add the spring onions (scallions), celery, mushrooms and parsley and mix well. Line a serving dish with lettuce leaves and place the salad on the top.

Spaghetti and mushroom salad serves 6 to 8 people.
