Ingredients Watermelon Creole Salad

Watermelon Creole Salad measurements  Metric / Imperial (American)

1 watermelon halved (1/2 watermelon)

225g 8oz shelled cooked prawns (1/2lb cooked shrimp)

1 small green pepper cored seeded and diced

300ml 1/2 pint low calorie mayonnaise (1 1/4 cups)

2 teaspoons tomato puree (paste)

1 teaspoon curry powder

Method for Watermelon Creole Salad:-

Scoop out the watermelon flesh with a melon ball maker or cut into cubes, discarding all of the seeds. Place the watermelon balls or cubes into a bowl and add the prawns (Shrimp) and green pepper. Mix together the low calorie mayonnaise, tomato puree (paste) and the curry powder. Pour this dressing mix over the watermelon mixture and fold together gently.

Creole Salad Serves 4 People
